Somebody’s Mother’s Caramel Sauce
I happened upon this at the local grocery store and at the time I thought this looks TOO GOOD to be corn free! Tentatively I read the ingredients: Heavy cream (milk, cream) contains less than 1% sodium citrate and disodium phosphate), sugar, butter (salted). I bought it and when I got home I looked up sodium citrate. I wanted to cry when I saw that sodium citrate = sodium salts of citric acid. I wrote the company fully expecting this to be corn-based citric acid. I was absolutely thrilled when they wrote back that afternoon and said they had contacted their supplier and it was NOT derived from corn!
I had this heavenly caramel sauce last night over some apples (I cannot tell you how long I have yearned for caramel apples). What struck me about this sauce is that it is not sickeningly sweet like the corny caramels I remember. It defies explanation–it is rich and delicious, just the right amount of sweet with a scrumptious caramel taste. The best part, other than the taste, is that I had zero symptoms after eating this, none!
It’s not cheap but I am a true believer in “you get what you pay for.” Honestly it’s worth every penny and there are so many things like this that we can’t have. Treat yourself, you won’t regret it!
I am going to redouble my efforts to find a corn-free ice cream after eating this caramel as I feel it somewhat decadent to just eat this out of the jar, although I could find myself abandoning my food morals and doing just that!
